Every product starts on Automatic. Change the ones that matter:
Product overrides
Give specific products their own low-stock level, lead time or supplier. Leave a field blank to use the store setting.

Stock changes are checked together, at most once every five minutes per store, so a rush of orders becomes one email. Each product alerts once, then waits until it's back in good shape. And there are never more than 5 alert emails in 24 hours.
